I looked at lots of fancy mandolines here on Amazon, but this is the original and it works like a dream. You can feel the Japanese engineering–simple, sturdy and well-made. Removing and changing blades is intuitive and easy, and the blades are frighteningly sharp. Ease of cleaning was key for me, because if a cooking tool is a pain to clean I stop using it. This is very easy to clean and dry. Be careful with colored vegetables like carrots. Get the mandoline in hot, soapy water immediately after using so it won’t stain the light almond color. Lightly scrub with a nylon brush and you’re good to go. Lots of attachments, and they all work great. Pro tip: Splurge and get the mesh gloves. You don’t want to tear your hands up on this crazy sharp blade!

An instruction I didn’t see but figured out: To remove the feed table unscrew and remove the dial on the underside that adjusts its level. Then the feed table can be rotated and removed for cleaning. I really like this but I’m scared of it. It works better than the one it’s replacing. It’s sturdier and sharper. I keep the extra blades, the pusher and an anti-cut glove by it in the cupboard. When I put it away, I turn the dial so the feed table surface is level with the blade so It is harder to accidentally cut myself on it in handling and I put a refrigerator magnet/clip magnet with the glove in it on the blade to further block an accidental slice of flesh and remind me to use the glove. I keep the 3 slotted blades wrapped in paper towel pieces in a zip lock bag. The slotted blades are iffy, they may work or they may clog. The feathery slices this mandolin makes are enough reason to appreciate it. As I type this, I think I’ll find a bag to store it in so it can’t cut someone reaching past it in the cupboard. It is wicked sharp.
practical flippery –
I can see why this is so popular in restaurants. It slices like a charm. But not the grater, at all, so don’t bother. For the price though, I wouldn’t expect any extras and am happy just with saving so much time when slicing compared to cutting with a knife.

This is a great mandoline slicer! I mean GREAT! It arrived super sharp and is very easy to use, and it is the best mandoline I have ever owned. One of its best features is the removable blade that allows for easy sharpening. With that said, this isn’t the best tool for everyone, especially people who don’t spend much time in the kitchen.There are two issues that would prevent me from recommending this to kitchen neophytes. First, slice thickness is controlled by a knob that allows for continuous adjustment of the blade. This is great for experienced cooks because it allows us to slice things at any thickness we want. However, the lack of fixed steps for the blade can make it difficult to replicate slice thickness which could be frustrating for someone who doesn’t use the mandoline much. Second, the mandoline could be a little dangerous for casual users. Some slicers have expansive safety features to ensure your hand doesn’t come into contact with the blade. In my experience, most of those safety features get in the way of slicing. The Benriner is a beautifully minimalist design that strips away any notable safety features so you can get to work, but it leaves a very sharp blade exposed which could eat up the fingers of a newbie if they aren’t careful. Bottom line, if you are comfortable with kitchen tools and do a lot of cooking (and slicing) the Benriner Super Standard is fantastic. If you are just getting into the slicing game, a mandoline with more safety features is probably a better choice.One last note: if you are buying a Benriner mandoline, spend the extra money for the Benriner Super Standard rather than the Benriner No. 64. They are the same slicer but the Super Standard is a bit wider, and the extra width with allow you to slice a lot more foods.
Boring Bob –
I have used several mandolines, and this one is far and away the best. The adjustment is simple, and you can create slices thin enough to see through. I have used it for tomatoes, cabbage, zucchini, eggplant, and peppers, and it performed admirably. I have not tried the secondary blades yet, nor have I tried hard vegetables (carrots, radishes, etc.).This is extremely sharp! I ordered cut resistant gloves as a precautionary measure, I sometimes get distracted in the kitchen and I want to keep my fingertips.This is my new best friend for making sauerkraut and cortido, and I will never go back to using a knife for this – I can shred a cabbage in about ⅓ the time it would take to cut it by hand.It may seem pricey, but it is worth every penny, you will not regret the purchase.

I replaced an older, much larger mandoline with this gem. Not only are the blades super sharp, but this stores in a third the space of my previous unit. Clean up is a snap! My only recommendation is that, like with any mandoline, I highly recommend cut proof gloves in addition to the provided safety features. They are super cheap and a great layer of additional insurance!

Blades are really sharpThis is nice and easy to use but watch that you don’t slice your fingers, it’s very sharp. I used it to prepare fruit and vegetables for dehydration and it worked very well for this purpose. Larger vegetables like squash have to be cut into smaller pieces first, but it is fine for even larger size apples. I did not try it with softer fruit like plums, mangoes, or tomatoes, but I think it would be fine as the blades are very sharp, as long as the pits are removed first. You could also use this for making your own potato or yam chips. It is easy to use over a large bowl or pot to catch things in.It seems to be fairly durably made and you can get replacement blades for it, so I expect to get a good number of years of use out of it.

Amazing mandolin, but very dangerous. Buy a cut proof glove!I love this mandolin. It works well and is easy to use and clean. The blade is extremely sharp.It easily cuts through carrots (which are really hard).You can easily slice off your fingertips with this mandolin. The safety guard that comes with it isn’t great, so I don’t use it.You must get a cut-proof glove to use this. Cut-proof gloves come in different grades. Grade F is the most cut-resistant (so the safest), but Grade E or D will be ok. When buying, if it doesn’t say the grade, don’t buy. And by a branded glove from a trusted source.
